Lemon Sole with Tomato Olive Sauce

INGREDIENTS

1 pound Lemon Sole
4 garlic cloves, minced
6 plum tomatoes, diced
10 Kalamata olives, pitted and diced

DIRECTIONS

1. Sauté garlic in olive oil.

2. Add tomatoes and cook for 10 minutes.

3. Add olives and season with salt and pepper.

4. Arrange fish in baking dish and pour sauce over.

5. Bake at 375° for 20-25 minutes
