Miso-Marinated Salmon with Citrus & Shiitake

INGREDIENTS

Whole salmon fillet
2 cups white miso
2 tablespoons sake or white wine

1/4 cup olive oil
1 pound fresh shiitake mushrooms, remove stems and thinly slice caps
3 fresh oranges
3 large lemons

1 cup cilantro leaves can be substituted for parsley
1/2 cup chives, cut in 1/2-inch pieces

DIRECTIONS

1. Mix 1/2 cup orange juice and 3 tablespoons fresh squeezed juice.

2. Stir in miso and sake.

3. Marinate salmon, skin side down, in mixture for 24 hours.

4. Sauté mushrooms in olive oil, until golden.

5. Add thinly sliced orange zests to mushrooms.

6. Heat oven to 500°.

7. Remove salmon from marinade, scraping off excess miso. Arrange fish, skin side down on greased baking pan.

8. Roast salmon in upper part of oven, but not directly under broiler, about 20 minutes.

9. To serve: Pour pan drippings over salmon. Garnish with orange and lemon rind. Add chives and cilantro to mushrooms and serve with salmon
