Red Snapper Puttenesca

INGREDIENTS

1 pound red snapper
1 tablespoon lemon juice
1-1/4 teaspoons pepper
2 teaspoons olive oil
1 onion, diced
3 garlic cloves, crushed
3 large tomatoes, diced
8 black olives, sliced
2 tablespoons capers
1 tablespoon anchovies, minced
1/4 cup fresh basil
1 tablespoon oregano
1/4 cup parsley

DIRECTIONS

1. Preheat oven to 350 degrees.

2. Put fish in a glass Pyrex with lemon juice and pepper.

3. Sauté onion and garlic in olive oil. Add the rest of the ingredients.

4. Bring to a boil, then simmer for 5 minutes.

5. Pour over fish, covered and bake for 30 minutes.

6. Serve immediately.
