Roasted Halibut with Onion Wine Sauce

INGREDIENTS

2 cups sliced onions
1 garlic clove, minced
2 teaspoons olive oil
1/3 cup dry red wine
1/4 cup sugar
Salt and black pepper
4 Halibut fillet

DIRECTIONS

1. Preheat oven to 450°.

2. Cook onion and garlic in oil until onions are translucent.

3. Add wine, water, sugar, salt and pepper. Simmer for 2 minutes.

4. Season fillets with salt and pepper and put in Pyrex. Top with sauce and roast for 15 to 20 minutes. Sauce can be prepared in advanced.
