Salmon on a Bed of Leeks

INGREDIENTS

4 6-ounce Salmon fillets
1-1/4 sticks of butter
3 garlic cloves, crushed
1/4 cup of white wine
1/4 cup of heavy cream
3 bunches of leeks

DIRECTIONS

1. Preheat oven to 400°.

2. Cut leeks lengthwise in strips trimming off greens.

3. Place fillets on baking sheet with salt, pepper, garlic and 3 tablespoons of butter patted on.

4. Roast about 20-30 minutes.

For leek mixture
5. Saute remaining butter in medium saute pan until almost melted.

6. Add leeks and saute for about 15-20 minutes or until leeks turn a light golden color.
When nearly ready, add wine and simmer until evaporates, then add cream and season with salt and pepper.

7. During the last 10 minutes of cooking, place leek mixture on baking tray with salmon on top and continue cooking until desired.
