Salmon on a Bed of Leeks

INGREDIENTS 4 6-ounce Salmon fillets DIRECTIONS 1. Preheat oven to 400°. 2. Cut leeks lengthwise in strips trimming off greens. 3. Place fillets on baking sheet with salt, pepper, garlic and 3 tablespoons of butter patted on. 4. Roast about 20-30 minutes. For leek mixture 6. Add leeks and saute for about 15-20 minutes or until leeks turn a light golden color. 7. During the last 10 minutes of cooking, place leek mixture on baking tray with salmon on top and continue cooking until desired. |
