Salmon with Black Olive Vinaigrette

INGREDIENTS

4 Salmon fillets or 4 Tuna fillets

Vinaigrette:
1/2 cup olive oil
1/4 cup red wine vinegar
1/2 cup pitted Kalamata olives
2 garlic cloves, chopped
4 teaspoons Dijon mustard
1 tablespoon of honey
Salt and pepper

DIRECTIONS

1. Combine ingredients for vinaigrette in blender.

2. Put Salmon in dish. Pour half of vinaigrette over and marinate for 15-20 minutes.

3. Preheat grill or grill pan.

4. Grill about 4 minutes per side, brushing every 2 minutes. Serve with remaining
vinaigrette.
