Salmon with Bread Crumb, Olive & Sundried Tomato Crust

INGREDIENTS

1/4 cup chopped pitted Kalamata olives
1/4 cup pitted chopped green olives
1/4 cup chopped drained oil packed sundried tomatoes
3 garlic cloves, minced
2 tablespoons butter, melted
1-1/2 teaspoons chopped fresh rosemary
1-1/2 teaspoon chopped fresh thyme
5-1/2 teaspoons Dijon mustard
1 cup breadcrumbs
4 6-ounce Salmon fillets

DIRECTIONS

1. Preheat oven to 400°.

2. Mix first 7 ingredients in bowl then add 1-1/2 teaspoons of mustard, then breadcrumbs.

3. Place Salmon on baking sheet. Spread 1 teaspoon mustard over each piece of fish. Pat 1/4 of breadcrumbs mixture onto each fillet.

4. Bake until fillets are done, about 20 minutes or until desired.
