Salmon with Soy Honey & Wasabi Sauces

INGREDIENTS

Salmon:
1/2 cup mirin
2 tablespoons soy sauce
1/4 cup rice vinegar (not seasoned)
1 tablespoon freshly grated peeled ginger
4 (6 ounce) Salmon fillets

Sauces:
2 tablespoons soy sauce
1/4 cup honey
1 tablespoon fresh lime juice
2 teaspoons wasabi powder
1 tablespoon water

DIRECTIONS

1. Stir mirin, soy sauce, vinegar and ginger in dish. Pour over fish (skin side down) and marinate covered about 25 minutes.

2. Boil soy sauce, honey and lime juice in sauce pan, stirring constantly until thick.

3. Stir wasabi powder and water in small bowl.

4. Broil fish, skin side down (not directly under heat-slightly lower) about 6 minutes. If you like fish more well done, you can continue cooking in oven on 400°.

5. Drizzle sauces over Salmon. (Sauce can be made 2 hours ahead, kept and covered at room temperature.)
