Seared Parsley Salmon with Spinach in a Garlic Orange Sauce

INGREDIENTS 1 8-ounce Salmon fillet DIRECTIONS 1. Sprinkle salt, pepper, and parsley on top of Salmon. 2. Heat up pan until smoking. Add Salmon, herb side first and sear well on both sides. 3. Take Salmon out of pan and heat in 350° oven for 8-10 minutes. 4. In same pan, add 1 teaspoon garlic. Cook until golden brown. 5. Add orange juice. Reduce to low heat for 3-5 minutes. 6. In another pan heat oil and add remainder of garlic. Cook until brown and add spinach. Cook until tender. 7. Add butter in pan, with sauce. Cook until it emulsifies. 8.Place spinach in middle of plate. Top with Salmon. Spoon sauce around fish. Add orange wedge and parsley to decorate. |
