Sole Florentine

INGREDIENTS

1 bag frozen chopped spinach
Kosher salt
1 small onion
Oregano
Garlic powder
2 small potatoes
2-3 fillet of Sole

DIRECTIONS

1. Cook spinach with one chopped onion in 2 tablespoons of olive oil.

2. Add a pinch of kosher salt to spinach. Set aside.

3. Slice potatoes in rounds, par boil and set aside.

4. Slice onion in thin rounds. Set aside.

5. In a large rectangular Pyrex, line the bottom with the spinach mixture.

6. Place the pieces of fish neatly on top of spinach layer.

7. Place the potatoes on top of fish layer.

8. Place the onions on top of potato layer.

9. Sprinkle salt, pepper, garlic powder and oregano on top.

10. Drizzle 1 tablespoon of olive oil over potatoes.

11. Bake at 350° for 1?2 hour covered and 1?2 hour uncovered.
