Sushi Rice with Blackened Tuna

INGREDIENTS

Sushi Rice
11?2 cups sushi rice
2 tablespoons rice vinegar
1 teaspoon sesame seeds
1 teaspoon sesame oil
1?2 teaspoon sugar
21?4 cups water

Blackened Tuna
2-3 pounds sushi quality Tuna
Sesame oil
Cajun spice (McCormick)

Avocado
Kirbys, thinnly sliced

DIRECTIONS

Sushi Rice
1. Place water, sugar, oil, sesame seeds and vinegar in pot.

2. Bring to a boil and add cleaned rice.

3. Simmer on low until done.

Blackened Tuna
1. Cut Tuna in strips and coat with sesame oil and Cajun spice.

2. Heat sesame oil in pan until warm.

3. Add fish, cooking three minutes on each side on medium to high flame, leaving it pink in the middle.

To arrange fish, place a mound of rice on plate, then sliced avocado on top, followed by sliced Kirby's. Top with Tuna. Serve with soy sauce.
