Turbot with Garlic & Parsley

INGREDIENTS

11?2 pounds Turbot (Grouper, Red Snapper, or St. Peters may be substituted)
2 cups loosely packed parsley
2 large garlic cloves
Juice of 1 lemon
1?4 to 1?3 cup olive oil
Salt and pepper

DIRECTIONS

1. Preheat oven to 450°.

2. Lightly grease baking sheet and lay fish on it.

3. Brush fish lightly with olive oil. Season with salt and pepper.

4. Cook fish in oven for about 10 minutes or until almost cooked through.

5. Meanwhile, combine parsley, garlic, lemon and olive oil in blender or food processor.

6. Spread parsley mixture on top of fish and return to oven to finish cooking, about 5 more minutes, until fish is opaque.
