Fancy Spiral Coffee Cake

INGREDIENTS Filling: Dough: DIRECTIONS 1. Melt and cool butter. 2. Separately dissolve yeast and warm water. Combine milk, butter, yeast mixture, beaten eggs, sugar and salt. Add flour gradually. Knead well. Cover with a damp towel. Refrigerate 2 hours or overnight. 3. Add all filling ingredients and mix well. 4. Divide cold dough into three sections. Roll 9×14 rectangle (flour surface lightly) and spread with 1/3 of filling. Roll into jelly roll. Seal edges with water. 5. Form roll into a circle and pinch closed, seam down. Cut with scissors or kitchen shears every 3/4 or 1/2-inch evenly around circle. Do not cut through. Leave 1/2 – 3/4-inch uncut. 6. Lift cut slice and fold over to the right and continue around circle evenly. Filling will show. Press down slightly as you turn. Cover with clean cloth and let rise in warm kitchen 45 minutes. 7. Bake at 400° for 15-20 minutes. Note: When cool, drizzle confectioners sugar mixed with a little milk. Keeps well in freezer if carefully wrapped. Variation Danishes: Make each roll as above. Do not join and slice every 1/2-inch and bake flat. Drizzle with sugar mixture. |
