Homemade Granola

INGREDIENTS

1/2 cup unsweetened shredded coconut
4 cups old fashioned oats
1 cup coarsely chopped almonds
1/4 cup toasted wheat germ
1/4 cup unsalted sunflower seeds
1/4 cup flax seeds
1/2 teaspoons ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/3 cup canola oil
1/2 cup honey
1/2 cup golden raisins

DIRECTIONS

1. Preheat oven to 350°.

2. Spread shredded coconut on baking pan and toast for 5 minutes. Let Cool.

3. Reduce oven temperature to 300°.

4. Line 2 baking pans with parchment paper and set aside.

5. In a large bowl, combine oats, almonds, wheat germ, sunflower seeds, flax seeds,
cinnamon, nutmeg, oil and honey. Stir together until combined.

6. Spread mixture onto prepared baking pans.

7. Bake until granola is golden brown, 25 minutes. Let cool.

8. Break up cooled granola and transfer to large bowl.

Option: Sprinkle with coconut and raisins.

Can be stored in an airtight container for up to 1 month.
