Lemon Poppy Seed Muffins

INGREDIENTS 1-1/4 cups flour DIRECTIONS 1. Preheat oven to 400°. Spray muffin pan (2-1/2-inch cups) with Pam. 2. Combine dry ingredients in a bowl. 3. Combine wet ingredients in another bowl. 4. Stir wet mixture into dry ingredients until moistened. Do not overbeat. 5. Spoon batter into cups. 6. Bake 18 to 22 minutes until browned on second rack in oven. Note: With little sugar and almost no fat these muffins are moist and delicate (and only 130 calories). |
