Lemon Poppy Seed Muffins

INGREDIENTS

1-1/4 cups flour
3/4 cup whole wheat flour
1/2 cup sugar
2 teaspoons poppy seeds
2 teaspoons baking powder
1 teaspoon baking soda
1?2 teaspoon salt
1 egg
3/4 cup nonfat plain yogurt
1/4 cup fresh lemon juice (or orange juice)
3 teaspoons skim milk
1 teaspoon butter melted
2 teaspoons grated lemon rind (or orange rind)

DIRECTIONS

1. Preheat oven to 400°. Spray muffin pan (2-1/2-inch cups) with Pam.

2. Combine dry ingredients in a bowl.

3. Combine wet ingredients in another bowl.

4. Stir wet mixture into dry ingredients until moistened. Do not overbeat.

5. Spoon batter into cups.

6. Bake 18 to 22 minutes until browned on second rack in oven.

Note: With little sugar and almost no fat these muffins are moist and delicate (and only 130 calories).
