Passover Mandel Bread II

INGREDIENTS

2 cups sifted sugar
1?2 pound butter or margarine
6 eggs at room temperature
23?4 cups cake meal
1?2 teaspoon salt
3?4 cup potato starch
3 bars bittersweet chocolate,chopped coarse
8-10 ounces walnuts, chopped
1 teaspoon cinnamon mixed with 2 teaspoons sugar

DIRECTIONS

1. Preheat oven to 350° for 45 minutes.

2. In electric mixer, cream sugar and butter. Add eggs, one at a time, beating after each addition.

3. Sift together cake meal, salt and potato starch. Add to mixer slowly. Beat until smooth.

4. Fold in chopped chocolate and nuts.

5. Form into uniform loaves on greased trays 2-inch wide. Sprinkle cinnamon sugar mixture on top.

6. Bake at 350° for 45 minutes.

7. Slice while warm on diagonal and toast, lowering oven to 250°.

8. Turn over and leave in oven until crisp.

9. Store in airtight container lined with aluminum foil in freezer.
