Peachy Oatmeal Bars

INGREDIENTS

Crumb Mixture:
1-1/2 cups flour
1 cup uncooked rolled oats
3/4 cup margarine, melted
1/2 cup sugar
2 teaspoons almond extract
1-1/2 teaspoons baking soda
1/4 teaspoon salt

Filling:
3/4 cup apricot preserves
1/3 cup flaked coconut

DIRECTIONS

1. Preheat oven to 350°.

2. Combine crumb ingredients in large bowl. Beat with electric mixer at low speed, scraping bowl often, until mixture is crumbly, 1-2 minutes. Reserve 3/4 cup crumb mixture. Press remaining crumb mixture onto bottom of Pyrex.

3. Spread apricot preserves on top of crumb mixture top with remaining crumbs and coconut.

4. Bake 20-25 minutes until edges are lightly browned. Cool completely. Cut into bars.
