Strawberry Angel Cake

INGREDIENTS

1 box angel food cake mix, baked and cooked
1 pint fresh strawberries, chopped
1/2 cup sugar
1/2 cup water
2 tablespoons cornstarch
Whipped cream for garnish

DIRECTIONS

1. Prepare 1 box of angel food cake mix as directed, bake and cool.

2. Prepare strawberry filling: Chop fresh strawberries (about 1 pint) and put them in a small heavy pan and mash them into a purée.

3. Mix 1?2 cup of sugar, 1?2 cup water and 2 tablespoons cornstarch in a small bowl until blended. Stir mixture into strawberries and cook over medium flame until boiling. Reduce heat and simmer, always stirring, until thick and shiny. When cool, cover with wrap and refrigerate for at least 2 hours.

4. Carefully slice angel cake in three layers horizontally.

5. Put 1 layer on cake plate. Carefully spoon strawberry mixture in a layer. Top with another layer of cake, then another layer of strawberry mixture or cake. Top with last layer.

6. Garnish with swirls of whipped cream and whole strawberries. Serve with extra whipped cream on the side.

Optional: If whipping whipped topping, add red food coloring (3-4 drops) to make cream pink. You can also glaze the strawberries on top by heating strawberry jam in microwave and brushing it on strawberries.
