The Ultimate Chocolate Cake

INGREDIENTS

2 cups sugar
2 cups flour
3?4 cup cocoa
11?2 teaspoons baking powder
11?2 teaspoons baking soda
1 teaspoon table salt
2 eggs
1 cup vanilla soy milk
1?2 cup oil
2 tablespoons vanilla (real, not artificial)
1 cup boiling water
Flour spray (Baker's Joy or Haddar)

DIRECTIONS

1. Preheat the oven to 350°.

2. Spray baking pan(s) with flour spray.

3. Combine the dry ingredients in a bowl. Add the eggs, vanilla soy milk, oil and vanilla.

4. Beat on medium speed for 2 minutes. Slowly pour boiling water in a thin stream into the batter. When combined, pour batter into prepared pan(s).

5. Check for doneness after 30-35 minutes (baking time will depend upon your oven – however, cake is done when a toothpick inserted into the center comes out without any crumbs adhering to it).

6. Let cake cool in the pan for 5 minutes before inverting.
