Accordion Potatoes with Thyme

INGREDIENTS 4-5 pounds little red potatoes, washed DIRECTIONS 1. Preheat oven to 350°. 2. Slice all of the potatoes like an accordion, which means that each little potato gets about 8-10 slices on an angle. Never let the knife cut all the way though, only 3/4 the way. 3. Add salt, black pepper, red pepper, 8 tablespoons of olive oil and thyme. Mix all around. Place on baking tray. 4. Place in oven on middle rack uncovered for about one hour. 5. Take out of oven and let cool. 6. When cool, hand open each potato with thumb. 7. Place back in oven uncovered for about 2 more hours. 8. Keep checking on potatoes and shuffle the tin around with two hands, with gloves, so potatoes cook well. 9. Cook for half an hour at 350°. 10. Serve. |
