Artichokes Stuffed with Mashed Potatoes

INGREDIENTS

2 packages of frozen artichoke bottoms
Instant mashed potatoes
Corn flake crumbs
Onion
Egg for dipping

DIRECTIONS

1. Make mashed potato mixture and add fried onion.

2. Spoon potato into artichoke bottoms.

3. Dip potato side into egg and then into corn-flake crumbs seasoned with salt and pepper.

4. Put oil in a skillet and heat.

5. Pan fry each one with corn flakes faced down until browned.

6. Arrange in a Pyrex dish and season with lemon, oil, garlic, salt and pepper.

Tip: Artichokes can be prepared and then frozen.
