Arugula and Cannellini Salad

INGREDIENTS

2 bunches Arugula, washed well and dried
1 15-ounce can Cannellini beans, rinsed and drained well
4 plum tomatoes, cubed
1/2 red onion, chopped well

Dressing
1/3 cup olive oil
1/3 cup balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cloves garlic, crushed
1/4 cup finely chopped fresh basil (optional)

DIRECTIONS

1. Cut each arugula stem into three even pieces. Combine with beans, tomatoes and onion.

2. Whisk together dressing ingredients and pour over salad.
