Asian Asparagus and Orange Salad

INGREDIENTS

2 oranges
1 tablespoon vegetable oil
6 cups (2-inch) diagonally sliced asparagus pieces
1 garlic clove, thinly sliced
2 teaspoons low-sodiumsoy sauce
1/4 teaspoon dark sesame oil
1 tablespoon sesame seeds, toasted
Napa cabbage leaves (optional)

DIRECTIONS

1. Peel and section oranges over a bowl, reserving 1 teaspoon of the juice. Discard membranes. Set sections aside.

2. Heat vegetable oil in a large skillet over medium high heat. Add asparagus and garlic and sauté for 5 minutes. Remove from pan.

3. Combine soy sauce and sesame oil and pour over asparagus mixture, tossing well.

4. Cool to room temperature. Stir in sesame seeds, orange sections and the reserve orange juice.

5. Serve on cabbage leaves.
