Avocado Salad with Mango Vinaigrette

INGREDIENTS

1 cup diced mango
1 teaspoon Dijon mustard
1/2 teaspoon paprika
1 teaspoon chopped parsley
1 teaspoon chopped garlic
1/4 teaspoon salt
1/4 teaspoon cup apple cider vinegar
1/3 cup olive oil
2 avocados, peeled and sliced

DIRECTIONS

1. Place all ingredients, except avocado and oil, into a blender. Add oil slowly while blending until smooth.

2. Pour over avocado slices or spoon vinaigrette inside a pitted avocado half.
