Barney's Tuna Salad (Fred's Restaurant)

INGREDIENTS

Italian tuna only
1 can of white beans
1/2 cup frozen peas
Roasted tri-color peppers
2 beets (only fresh)
1/2 cup French lentils, cooked until tender
1 bunch asparagus tips
1 large red sweet onions, finely chopped
4 chopped plum tomatoes
Any chopped salad (Italian mix preferred)

Vinaigrette Dressing:
2 tablespoons balsamic vinegar
2 tablespoons white wine vinegar
2 teaspoons Dijon mustard
1 shallot, minced2/3 cup olive oil
Salt
Pepper

DIRECTIONS

Salad:
1. Toss everything together with a Balsamic vinaigrette dressing.

Dressing:
1. Whisk together vinegars, mustard and shallot in small bowl.

2. Gradually add oil in a steady stream, whisking until well-blended.

3. Season to taste with salt and pepper.
