Beet Salad I

INGREDIENTS

2 bunches of beets

Dressing
1?4 red onion finely chopped
1?2 cup lemon juice
1?2 cup olive oil
2 cloves of garlic, crushed
1 teaspoon cumin
Salt to taste

DIRECTIONS

1. Boil beets for about 45 minutes or until a fork easily goes through the top.

2. Whisk in all ingredients for dressing in a measuring cup.

3. Slice or chop beets, pour dressing over them, and serve.
