Cream of Red Pepper Soup

INGREDIENTS 2 teaspoons butter DIRECTIONS 1. Melt butter, sauté onions and shallots, add water or broth and simmer covered for 30 minutes. 2. Preheat broiler. Broil peppers turning on all sides until skin is black. Remove skins and seeds and purée in blender. 3. Add purée to broth and cook for one minute. Add salt and pepper and a pinch of nutmeg and cayenne, for flavor. 4. Remove from heat. Stir in heavy cream. 5. Serve immediately. |
