Eggplant Terrine (Napoleon)

INGREDIENTS

3 eggplants, grilled
6 ripe large tomatoes
1 container Feta cheese

Dressing (Basil Oil)
1 bunch basil or cilantro
2 garlic cloves
1 teaspoon kosher salt
1-1/2 teaspoons lemon juice (fresh only)
1/4 cup olive oil

DIRECTIONS

1. In a Springform pan, layer half the eggplant, tomatoes and feta cheese.

2. Top with half of the basil oil.

3. Repeat eggplant, tomatoes and feta cheese.

4. Sprinkle more basil oil on top.

5. Finish with pouring more balsamic vinegar on top.

6. Pop out of Springform pan and serve.
