Fast and Easy Roasted Veggies

INGREDIENTS

Carrots, cut in rounds
Shallots
Sweet potato, cut in rounds
Colored peppers, cut in strips
Baby eggplant
White eggplant
Colored squash

DIRECTIONS

1. Toss all veggies in oil with salt, garlic powder and onion powder.

2. Layer in Pyrex and put in oven at 350° until roasted.
