French String Bean Salad

INGREDIENTS

2 pounds string beans
1 teaspoon baking soda
2 bunches beets
2 teaspoons Dijon mustard
1/4 cup balsamic vinegar
Sundried tomatoes, optional

DIRECTIONS

1. Cook string beans in water with baking soda for about 10 minutes. Drain.

2. Boil beets and drain.

3. Slice beets thin and add to cold string beans with Dijon mustard, balsamic vinegar and sundried tomatoes.

4. Season with salt and pepper.
