Fresh Salad with Wonton Crisps

INGREDIENTS

8 wontons, cut into strips
Romaine or Iceberg lettuce
Roasted peanuts, roughly
chopped

Dressing
1 tablespoon peanut butter
1/2 cup cream of coconut
1 teaspoon sugar
1 lime, juiced
Hot sauce
Salt and pepper

DIRECTIONS

1. Fry wonton strips and set aside.

2. Combine peanut butter and cream of coconut in a saucepan and heat under a low flame until peanut butter becomes smooth.

3. Remove from heat. Add remaining ingredients and allow to cool.

4. Assemble salad, add dressing and garnish with wonton strips.
