Grapefruit Granita

INGREDIENTS

1/3 cup water
1/2 cup sugar
2-1/2 cups fresh red or pink grapefruit juice

DIRECTIONS

1. Bring water and sugar to a boil, stirring until sugar is dissolved.

2. Cool syrup then stir syrup into juice.

3. Freeze in a shallow metal pan or glass Pyrex stirring occasionally (about every 40
minutes) with fork, until liquid is frozen and granular, about 6 hours.

4. Just before serving, scrape with a fork, breaking up lumps.

5. Garnish with mint sprigs.

6. Serve in a martini glass.
