Grilled Potato and Onion Packages

INGREDIENTS

2/3 cup olive oil
1 tablespoon Dijon mustard
2 tablespoons chopped fresh thyme or 1 tablespoon dried
1 teaspoon salt
1 teaspoon black pepper
2 pounds white skinned potatoes (4 large), peeled, sliced 1?4-inch thick
2 large red onions, halved, sliced 1/2-inch thick
Nonstick vegetable oil spray

DIRECTIONS

1. Combine oil, mustard, thyme, salt and pepper in large bowl. Whisk to blend well.

2. Prepare barbecue (medium-high heat).

3. Add potatoes and onions to mustard oil. Toss to coat.

4. Set 6 18 × 9-inch sheets of heavy duty foil on work surface. Spray foil with nonstick oil spray.

5. Divide vegetables and place on left side of each sheet.

6. Sprinkle with salt and pepper.

7. Fold right half of foil over vegetables.

8. Fold edges of packages together. Seal tightly.

9. Place packages on grill.

10. Grill until potatoes are tender and golden brown, turning occasionally for about 2-5 minutes.

11. Remove packages from grill. Slit top of foil and fold back.
