Strawberry Granita

INGREDIENTS 5 pints medium to large size strawberries, washed and hulled DIRECTIONS 1. Place berries in a food processor and blend until very smooth. 2. Strain through a fine sieve and discard the seeds. 3. Taste the mixture for sweetness. 4. In a saucepan, bring 6 cups water and sugar to a boil over high heat. 5. Remove from heat and set aside to cool. 6. When the sugar syrup is cool, add the strawberry purée, orange juice and lemon juice. 7. Stir well. 8. Freeze until slushy – do not let granita harden into a solid mass, it should be grainy. |
