Tasty Tortillas Filled with Tri-Color Peppers and Onions

INGREDIENTS 1 red, yellow, green and orange pepper, washed and cut into thin long strips DIRECTIONS 1. Put peppers and onions in a large roasting pan. 2. Drizzle with olive oil and season with salt, pepper and garlic powder. 3. Roast in oven until tender and rich in color. 4. Remove from oven and cool slightly. 5. Spoon mixture onto each tortilla and cut into diagonals. 6. May be made one day ahead. Wrap in Saran Wrap and store in the refrigerator. |
