White Bean Spread

INGREDIENTS

2 cans Cannelloni or navy beans
4-6 garlic cloves
1/4 cup olive oil
1 teaspoons cumin or to taste
1-4 teaspoon salt or to taste
Pinch of cayenne pepper

DIRECTIONS

1. Rinse and drain beans.

2. Using a food processor add desired amount of garlic and process until minced.

3. Add beans and remaining ingredients and blend until smooth.

4. Spread can be kept in refrigerator but it’s better to bring it to room temperature before serving.

5. Before serving, either sprinkle with paprika or garnish with a little chopped parsley. Serve with toasted pita, crackers or baguette slices.

For a slightly different taste, you may add some (1/8 cup) lemon juice to the mixture while it’s in the processor.
