Asian Noodle Salad

INGREDIENTS Salad: Dressing: DIRECTIONS 1. Bring 4 quarts of water to boil in a large pot. 2. Cook noodles for 8 minutes or until just tender. 3. Drain and rinse well. 4. Add snow peas and peppers. Set aside. 5. Whisk together rice vinegar, soy sauce, garlic, ginger and honey. 6. Add both oils in a thin stream and blend well. 7. Pour dressing over noodles and add peanuts and scallions. 8. Toss well to coat noodles with dressing. Serve at room temperature. |
