Asian Pasta Salad

INGREDIENTS

Dressing:
1/2 cup rice vinegar
3 tablespoons toasted sesame oil
2 tablespoons low-sodium soy sauce
2 teaspoons finely chopped garlic
2 teaspoons grated ginger
1/2 cup sliced roasted red peppers
1/4 teaspoon salt
1/2 teaspoon chili powder

Salad:
1 box of cooked thin noodles
1 cup fresh or frozen pea-pods, strings removed
1 cup bean sprouts
1/2 cup sliced red onions

Garnish:
6 large red leaf lettuce leaves

DIRECTIONS

1. Combine vinegar, oil, soy sauce, garlic, ginger, roasted red peppers, chili powder and salt. Set aside.

2. Toss together noodles, pea pods, bean sprouts and onion. Pour the dressing over the mix and stir well.

3. Let sit 30 minutes for the flavors to mingle.

4. Serve on top of red leaf lettuce.
