Citrus Couscous

INGREDIENTS

1 box plain couscous
Zest from 1 orange
3 tablespoons currants
1/2 cup chopped parsley
1/4 cup chopped scallions
2 tablespoons chopped toasted pecans (or pine nuts)
Freshly ground pepper

DIRECTIONS

1. To make couscous, follow directions on box, but substitute 1/4 cup fresh orange juice for 1/4 cup of the water.

2. When couscous is cool, fluff with a fork and add rest of ingredients (adding more or less of them to your taste).

Note: Quick and easy, goes great with roasted salmon.
