Couscous Salad with Vegetables

INGREDIENTS

1 box couscous
1 red pepper, diced small
1 yellow pepper, diced small
1 orange pepper, diced small
3 scallions, sliced thin
1 can chick peas
1/2 cup cranberries
1/2 cup chopped tomatoes, diced small

Dressing:
1/2 cup olive oil
2 fresh lemons
1 clove garlic
Mint
Oregano
Basil
Salt
Pepper

DIRECTIONS

1. Cook couscous according to directions.

2. Sauté scallions and peppers.

3. Combine scallions and peppers with couscous.

4. Add remaining ingredients.

5. Mix dressing ingredients in blender Pour over couscous and toss.
