Fettuccini with Cilantro & Red Pepper Pesto

INGREDIENTS

1 box Fettuccine
2 cups fresh cilantro leaves, slightly packed
2 cloves garlic
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup olive oil
1 cup chopped sweet red pepper

DIRECTIONS

1. Cook and drain pasta.

2. Process cilantro, garlic, salt and pepper in food processor until finely chopped. While machine is running, add oil until combined well.

3. Mix pesto with pasta and serve.
