Grain Burgers in Pita

INGREDIENTS

2/3 cup pearl barley
2/3 cup brown lentils
2/3 cup brown rice
1 teaspoon salt
3 cups water
1 cup chopped onion
2 stalks celery chopped
7 tablespoons flour
4 eggs
Oil
Lettuce
Sprouts
Tomato
Pepper
Cumin

DIRECTIONS

1. Boil water. Add barley, lentils, rice and salt. Cook about 40 minutes.

2. In a large bowl, mix rice mixture with sautéed onion and celery.

3. Mix in spices, eggs and flour.

4. Form patties.

5. Heat a skillet with olive oil and pan fry the burgers 5 minutes each side.

6. Serve in pita triangles with lettuce, sprouts and tomato. (Tehina on side).
