Apricot Chicken Roll-Ups

INGREDIENTS

1-1/2 cups dried apricots
1/2 cup dried cranberries
3 tablespoons honey
1 cup bread crumbs
2 tablespoons parsley
1 tablespoon flour
1 teaspoon paprika
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon garlic powder
Black pepper to taste
2 tablespoons oil
2 eggs
6 boneless skinless chicken cutlets, sliced thin

DIRECTIONS

1. Preheat oven to 350°.

2. Stir together apricots, cranberries and honey. Set aside.

3. Put together bread crumbs, parsley, flour, paprika, sugar, salt, garlic powder and a
little pepper and oil.

4. In another dish, beat eggs.

5. Spoon a little of apricot mixture into each cutlet, roll up and secure with toothpick.

6. Dip in egg, then in crumb mixture and place into greased Pyrex. Bake for 45
minutes and discard toothpick.

7. Serve.
