Breaded Dijon Salmon

INGREDIENTS

4 pieces salmon fillet
1 cup fresh breadcrumbs
1/4 cup Kalamata olives, or Brine cured olives, minced
1/4 cup green olives, minced
1/4 cup sundried tomatoes, minced
3 garlic cloves, minced
1 tablespoon butter, melted
Chopped fresh rosemary
Chopped fresh thyme
6 teaspoons Dijon mustard

DIRECTIONS

1. Combine breadcrumbs, olives, tomatoes, garlic, spices and butter.

2. Spread 1 teaspoon mustard on each fillet and top with crumb mixture.

3. Bake for 12 minutes in 400° oven or until fish flakes.
