INGREDIENTS 1 whole chicken DIRECTIONS 1. Roast chicken with garlic powder, black pepper, onion powder and paprika, and place in the oven for about 45 minutes – 1 hour. 2. Put oil on the bottom of a 6-quart pot, and sauté onion, celery and green pepper. 3. Sauté mushrooms and red pepper with onion-celery mixture. Remove green pepper. 4. Take chicken out of the pot and put it into a Pyrex. 5. De-bone the chicken. Take chicken juice and put it into another Pyrex. Take chicken bones, put them in a pot. Cover them with water and leave it to boil. 6. Take Pyrex with original juice of the chicken and add flour and soy sauce. Add some water. Mix it all up. (*Never mix flour with hot liquid as it will not mix as finely.) 7. Add this mixture to onion-celery mixture. Pour boiling bone water into onion-celery mixture as well. Add enough water to cover the vegetables and the shredded chicken pieces. Stir this mixture over a medium flame. Mixture should be getting thick. 8. Add in peas. 9. Close flame and let peas cook on their own. |
