Citrus Roasted Salmon

INGREDIENTS Side of salmon or salmon fillet pieces (washed) DIRECTIONS 1. Preheat oven to 400°. 2. Line a baking tray with foil, then spray well with canola or cooking spray. Place side of salmon or fillets, on foil. 3. Squeeze the fresh citrus juices all over the fish (using all, or just the flavors you choose). Drizzle soy sauce over, and then rub in citrus zests (reserving some zests). Drizzle olive oil on top and grind some fresh pepper to taste. 4. Bake for about 15-20 minutes (depending on size of fish, you may need more time). 5. Remove from oven and transfer fish to a clean sprayed foil. Place on tray and pat remaining zests on top of fish, then spray with canola spray and broil for several minutes until top gets crispy, watching carefully to make sure it doesn’t burn. 6. Remove from oven and squeeze additional juice from 1/2 orange on top, while salmon is still hot. Can be served right away or at room temperature. Serve on a bed of couscous. |
