Delicious Apricot Glazed Cornish Hens

INGREDIENTS 3 Cornish hens DIRECTIONS 1. Place the hens in a roaster with legs facing up. 2. Season with salt, paprika and black pepper. 3. Pour jar of Dip n' Joy sauce over chicken. 4. Bake covered at 350° for 1-1/2 – 2 hours until chicken is rich in color. 5. Put preserves, pistachios and apricots in a separate pot and simmer over a low flame for about 20 minutes until sauce is bubbling and darker in color. 6. When ready to serve, arrange hens in a platter with the legs facing up and pour sauce over chicken. |
