Easy Lemon Chicken

INGREDIENTS

8 chicken cutlets
2 eggs, beaten
1-1/2 cups flavored bread crumbs
1 can chicken broth (consommé)
5 tablespoons lemon juice
2 boxes mushrooms, sliced
1/2 stick margarine

DIRECTIONS

1. Dip cutlets in egg mixture then bread crumbs.

2. Fry cutlets, then place in a 9 × 13 Pyrex dish.

3. Put remaining ingredients in pan and simmer for 5-10 minutes. Pour over cutlets.

4. Refrigerate overnight.

5. Bake uncovered in oven at 350° for 40-45 minutes until golden brown.
