Fillet of Sole Roll-Ups

INGREDIENTS

Fillet of sole
1 red and 1 yellow pepper, julienne
1 onion, julienne
1 squash, julienne
2 tablespoons soy sauce
Salt and pepper

DIRECTIONS

1. Sauté vegetables in olive oil. Add salt and pepper and two tablespoons of soy sauce. Sauté until soft and dry. Put on side when done.

2. Wash fish and season it with salt and pepper. Put fish in Pyrex. Put vegetables on fish and fold over.

3. Sprinkle top of fish with paprika and a lot of Pam. Squeeze lemon on top of fish. Put some margarine on top of fish.

4. Bake at 350° for 30 minutes.
