Fish Cakes

INGREDIENTS

3 pounds flounder,cubed
3 large Yukon potatoes, boiled and mashed
3 large Vidalia onions
2 cups Jason flavored bread crumbs
1/4 teaspoon salt
2 eggs
Corn flake crumbs

DIRECTIONS

1. Sauté chopped onion in oil.

2. Add flounder and salt, cover. Cook until flaky. Flake with fork. Fish should be completely cooked. Cool fish.

3. Add potatoes which have been boiled and mashed

4. Add eggs and Jason bread crumbs. Mixture should be moist.

5. Form into patties and dip in corn flake crumbs

6. Bake at 350° for 45 minutes

Yield – 30
Can be frozen before baking.
Great with fresh tomato sauce on top.
